Ropogós libacomb gyömbéres sütőtökpürével,
balzsamecetes sült céklával
Hozzávalók:
3 db libacomb
1 kk só
½ mk őrölt bors
½ kk őrölt rozmaring
1 kk kakukkfű
2-3 babérlevél
1 fej hagyma negyedelve
1 egész gumó fokhagyma félbe vágva
1 l zsír (sertés/ liba/ kacsa)
Elkészítés:
A hozzávalókat egy vastagfalú fazékba tesszük, majd annyi zsírt öntünk rá, hogy ellepje a combokat.
Alacsony hőfokon, 95-100 fok között tartva, 3 órán keresztül konfitáljuk, amíg a hús vajpuha nem lesz.
A felhasználni kívánt combot tálalás előtt kivesszük a zsírból, kissé lecsepegtetjük, majd egy tapadásmentes serpenyőben mindkét oldalát ropogósra sütjük.
Gyömbéres sütőtökpüré
Hozzávalók:
1,5 kg sütőtök
olívaolaj
só, bors
1/4 mk gyömbérpor
100 ml tej
30 g vaj
Elkészítése:
A sütőtököt kettévágjuk, a magházat eltávolítjuk, sütőtálba tesszük. Kevés olívaolajjal meglocsoljuk, majd alufóliával lefedjük és 60 percig sütjük 180 fokon. Amikor megpuhult a tök, levesszük a fóliát és 220 fokon további 10-15 percig sütjük, míg szépen megpirul a teteje.
Kikanalazzuk a tök húsát, majd a mixer tégelyébe tesszük. Beletesszük a hozzávalókat, majd selymesre turmixoljuk.
Balzsamecetes sült cékla
Hozzávalók:
1 nagyobb gumó cékla felkockázva
só, bors
olívaolaj
1 mk szárított kakukkfű
3 ek balzsamecet
Elkészítése:
A felkockázott céklát sütőtálba tesszük, megforgatjuk az olajban, sózzuk, borsozzuk, jól átkeverem a kakukkfűvel. Meglocsoljuk a balzsamecettel is, majd alufóliával lefedjük. 180 fokos sütőben 60 percig sütjük.
Tálalás előtt serpenyőben kissé átpirítjuk.
